Ingredients
1 French baguette (about 20 slices)
4 tablespoons olive oil
2 teaspoons garlic, finely chopped
Combine olive oil and garlic. Brush baguette slices with garlic, olive oil mixture. Place on a baking sheet and toast lightly.
¼ cup sun-dried tomatoes
¼ cup fresh basil chopped
1 teaspoon garlic, chopped and sauté lightly to caramelize
5 tablespoons olive oil
Salt to taste
Place sun-dried tomatoes, basil, garlic and 5 tablespoons of olive oil in food processor bowl fitted with knife blade. Pulse 3-4 times until ingredients are lightly processed. Spread sun-dried tomato mixture on toasted baguette slices. Top with shaved parmesan cheese and serve.
Makes about 20 servings.
