{ Strawberry Blintzes }

Ingredients

1 cup flour

1 cup 2% milk

1 cup sugar

4 eggs

½ cup butter

Whip flour with milk together until smooth  texture add sugar and eggs and continue whipping until thoroughly mixed

Heat pan add ½ teaspoon butter when melted add Blintz mixture

When edges start browning or 2 minutes flip over and let cook for 1 minute

Remove set aside and repeat steps until all blintz mix is finished

Makes 8-10 Blintzes

 

Mascarpone Grand Marnier filling

2 Ounces Mascarpone cheese

8 ounces heavy whipping cream

2 tablespoons Powdered Sugar

4 Tablespoons Grand Marnier

Whip the ingredients together in mixer until whipped cream consistency

8 Strawberries

½ cup sugar

Rind of ¼ orange

Chop strawberries add sugar and orange rind and refrigerate overnight

Assembling:

Lay Blintz Pipe Filling into the middle of the blintz. Fold sides one on top on of the other.

Ladle strawberries mix over top

Garnish with fresh mint leaves and serve immediately.
