{ Champagne Chicken}

Ingredients

 

5 - 10 egg roll wrappers or won ton wrappers for garnish
4 cups vegetable or peanut oil

4 chicken breast halves (bone in or not)
4 tablespoons olive oil
1 cup flour
½ teaspoon salt
½ teaspoon white pepper
1 teaspoon minced garlic
1 cup sliced mushrooms
1 cup heavy whipping cream
2 cups Champagne
10 mandarin orange slices
10 red grapes cut in half 

Garnish Preparation:
Preheat 4 cups of oil in frying pan.
Remove egg roll wrappers from package and cut into ¼ inch strips.  Separate and drop egg roll strips in oil.  Cook about 30 seconds or until lightly browned and drain on paper towels.
Place cooked egg roll strips on medium sized serving platter.   

Chicken Preparation:
Heat 2 tablespoons of olive oil in a medium skillet.  In a medium bowl, mix together the flour, salt and white pepper.  Dredge chicken in flour mixture and place into pre-heated skillet.  Sauté 1-2 minutes per side until lightly brown.  Place chicken onto baking pan that has been prepared with baking spray and bake in 350° oven for 20 minutes or until chicken measures 165° on a meat thermometer.   

Sauce Preparation:
Heat 2 tablespoons of olive oil in a medium skillet along with garlic and mushrooms.  Sauté for 2-3 minutes over medium heat.  Add heavy cream and bring to boil.  Immediately add Champagne.  Simmer until sauce is reduced by 2/3 about 10 minutes. 

Arrange chicken breasts on top of prepared egg roll strips.  Pour sauce over chicken and garnish with mandarin oranges and grapes.
