Grilled Trout Stuffed with Fresh Herbs
2 trout (wild or farm raised)
1 tablespoon olive oil
Handful of fresh garden herbs (dried herbs will work as well)
Fresh Pico de Gallo or Chutney
Brush trout inside and out with olive oil.
Stuff the cavity with fresh herbs.
Place on hot grill, 3-4 minutes per side
Serve immediately as an appetizer or entrée with fresh pico de gallo or chutney on the side.
